Ingredients

  • 4 CELERY STALKS
  • 2 CARROTS
  • 3 MEDIUM RUSSET POTATOES
  • 1 WHITE ONION
  • 1 RED PEPPER
  • 5 CUPS CHICKEN BROTH
  • 1⁄2 CUP MILK
  • 1⁄2 CUP CREAM
  • 1 LB. VELVEETA (CUT INTO CUBES)
  • PEPPER AND GARLIC TO TASTEIS

Cooking Directions

  • PEEL AND CHOP ALL VEGGIES
  • COMBINE VEGETABLES WITH BROTH, PEPPER, AND GARLIC IN LARGE POT; BRING TO BOIL
  • REDUCE HEAT AND SIMMER FOR 15 MINUTES OR UNTIL VEGGIES ARE TENDER, STIR OCCASIONALLY
  • GRADUALLY WHISK IN MILK AND CREAM
  • REDUCE HEAT TO LOW AND ADD CUBED VELVEETA.
  • SIMMER, STIRRING FOR 5 MINUTES OR UNTIL CHEESE MELTS AND SOUP IS CREAMY
